Some days it's all about who went to time out.....me.....or them.....Mom Can I?http://www.blogger.com/profile/09452563194106730712noreply@blogger.comBlogger420125tag:blogger.com,1999:blog-3283930541003868347.post-22466371229142119422015-01-04T15:51:00.001-05:002015-01-04T15:51:06.948-05:00Oh the places you’ll go<p>So, Pootie’s real name is Jack Curtis.   He is our first born – our first baby.  </p> <p>Back in August (2014) we watched him make some pretty cool life decisions.  He’s a soccer player (I know, DUH) and was offered a FABULOUS offer from a college near us.  It is a well respected program, run by a very well respected coach.  Oh and it had the major that (for the moment) he is interested in.  </p> <p>He had also made the decision to graduate high school early.  The only class he technically needed to finish high school was “senior” English.  Oh, and he made the decision to longer participate in the US Soccer Development Academy program.  He opted to play for the high school…</p> <p>Side note: <br />What a great experience for my boys.  They were on the same team!  It made my momma heart happy.  It changed their relationship – BIG TIME.  We watched them become friends and it was awesome.  Since Jack had to ask the coach AFTER tryouts were over to even be considered for team, we will forever be thankful to the coach for the experience he enabled for them.  (Soccer wise it wasn’t about jack not being good enough – but the tryouts were over, the team was picked.  He did not have to let him on the team.)  And the other guys on the team – WOW – so cool the way they made Pootie feel welcome.  (Again, they didn’t have to)</p> <p><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEimoJFxF_mDSRU4z3mNIOkVdBYkS36B-GidGPNzWnnBwMpttMAeZsu74q9fjwMXGVN7zgqFQUZFv0lg_AHkayop7aIdhanqX5LQK9G_TMLcq6Q6-1kSxBXn-6lRxp-uMJfBaUW_BHbOPyU/s1600-h/IMG_20141016_182618%25255B4%25255D.jpg"><img title="IMG_20141016_182618" style="border-top: 0px; and Prepped<p>Just got home from the weekly grocery store circuit.  The week is planned out – and I’m getting ready to prep what can be prepped.  </p> <p><strong>Sunday</strong></p> <p>Hubby has refereed all weekend at a soccer tournament – So I know that he is going to be REALLY hungry tonight.  I’m going to do steaks on the grill, baked potatoes and a big tossed salad.  I also picked up a cheese cake from Sam’s.  He will be pleased.</p> <p><strong>Monday</strong></p> <p>I have a lot of things I want to get done tomorrow, so I’m making something easy.  Beef tacos with chorizo and all the other toppings including fresh avocado slices and some refried beans.  Nothing fancy, but it’s an easy way for everyone to have what they like.  I have crunchy shells, tortillas, chips and good old queso dip.  </p> <p><strong>Tuesday</strong></p> <p>At EVERYONE’s request – I’m doing the <a href="http://allrecipes.com/recipe/chicken-tikka-masala/detail.aspx">Chicken Tikka Masala</a> again.  I’m wondering if I can quadruple the the recipe. I tripled it last time and it still was gone in a flash!!! I've also used 2, 8 count croissant rolls and 2, 8 count grands country biscuits ***DO NOT COOK FIRST*** <br />4 scallions (green onions, spring onions, whatever you prefer to call them) <br />2 cups shredded extra sharp cheddar cheese</p> <p> <br />If you’re into the meats – cooked center cut bacon or cooked sausage, ham, turkey sausage/bacon (5-6 slices bacon, cooked n chopped ... 6 breakfast sausages, cooked and chopped ... 1 cup diced cooked ham) <br />Large baking casserole dish, sprayed with cooking spray (Note: I think a 9×13 works best, but it might need to bake a little longer)</p> <p> <br />1. Mix your eggs and milk in a large bowl. Cut each biscuit (I’m all about scissors in the kitchen) into fours and add it to the bowl. I like to do this before I cook the bacon or cut up the scallions – give the biscuits some time to really soak in the eggs. *when I use croissants I just roll as per regular instructions and don't cut them. <br />2. Cut up your green onions/scallions, shred your cheese, cook and break up your bacon (or sausage). Add everything to the bowl. Add only half the cheese, use rest for the top. <br />3. I opted for a <a href="http://www.skinnytaste.com/2011/03/chicken-and-mushrooms-in-garlic-white.html">Chicken and Mushroom in White Wine</a> sauce with garlic sautéed green beans and rice for dinner.  Everything is prepped and ready to go!  Lola helped me prep all the chicken for the week.  It SOOO makes things easier.  I found the recipe on <a href="http://www.skinnytaste.com">www.skinnytaste.com</a>  and it is a SUPER easy – GOOD recipe!!!!  The green beans par cooked with sautéed onions and garlic and they’ll get a quick toss in a pan before serving.  Delicious and still crispy.  </p> <p><a width="244" height="139" /></a> </p> <p>Tuesday is an easy night because I am going out to dinner with some of “the guys”.  So, I’ve got Roast Beef Sammies and good bakery bread for the family…along with a RIDICULOUS amount of ice cream for them to choose from.</p> <p>Wednesday night – we have a high school soccer game.  I’ll make a big pan of Chicken Parmesan, served with a side of pasta and broccoli.  Again – Lola has already pounded out the chicken for me – so all I have to do is sauté and then bake…this is a great meal to carb the boys up – they also have a game on Thursday night..</p> <p>Thursday night – we’re going with a lighter fare – <a href="http://www.skinnytaste.com/2010/03/cilantro-lime-shrimp.html">Cilantro Lime Shrimp</a> with brown rice and fresh pineapple.  The cilantro did double duty from Sunday nights dinner.  Just love the aroma in the kitchen from fresh cilantro!!!</p> <p>Other things being prepared for the week…Monday morning some French Toast – lots of deli sliced turkey sandwiches on a variety of bakery breads, tons of fresh oranges, apples and bananas…and of course –  I made sure there were leftovers for in between meal snacking!</p> <p>Have a great Madness<p>I haven’t posted in a LONG time – haven’t been in the mood.  I’m posting this because I’ve heard from several friends of mine *who are moms too* who are intrigued about my menu planning.  So in an effort to help the MOMS OF AMERICA (or North Carolina) I’m putting this out there…</p> <p> </p> <p>This week:</p> <p>Monday LASAGNA</p> <p> (This is not my dear friend Kary’s homemade everything lasagna but it does the job).  I made a LARGE throw away pan of it.  Bought large package of ground beef from COSTCO, browned half of it, used half for sauce – the other half was browned, drained and put in a freezer bag.  I will use it next week.  Bought the double pack of Prego sauce from COSTCO, used one.  My family likes pepperoni in the sauce too…so added that.  Lola and Crash helped with prep, it’s cooked and in fridge to “set” – tomorrow night it can warmed up accordingly.  Will make a simple salad and garlic bread.  What DOES NOT GET EATEN THIS WEEK – will be frozen into smaller servings for quick fixes for hungry teens.</p> <p>Tuesday STEAK</p> <p> COSTCO has some really good top sirloin steaks – these will get seasoned and grilled.  I’ve got stuff ready to go for homemade mac and cheese (Crash does NOT like boxed kind at all…)  I will also add a simple salad- just goes with the steak.  FYI – I love spring grilling :-)  And YES, I do the grilling.</p> <p>Wednesday SPIRAL SLICED HAM</p> <p>This is another family favorite….I buy the spiral sliced ham from ALDI….I’ve got mashed potatoes already done and frozen.  I think making literally a TON at a time and then freezing works great.  I’ll probably do corn or green beans of some sort.  The HAM will also serve a 2nd purpose – Hubby is good about cutting it all up and will use it over the weekend for omelets PLUS the kids will eat “after school snack” sandwiches from it.  </p> <p>Thursday LEFTOVER Night</p> <p>With these three big meals – it will get me off the hook for Thursday night.  </p> <p>Friday night – PRE-SOCCER MEAL will depend on everyone’s schedule.  </p> <p>I will probably do a simple pasta dinner, chicken alfredo,  because both boys have games on Saturday and they need to carb up.  I have zip lock bags of cooked shredded chicken in the freezer, and the jar of alfredo sauce is perfect tossed in with some cooked funky pasta and broccoli!</p> <ul> <li>What else I did to help me with the week.  I had Crash pound out about 7 chicken breasts, let them marinate for a bit, then threw them on the grill.  I’ll use that for sandwiches for lunch.  I bought the big package of croissant rolls from COSTCO this morning too.  The “bigs” love sandwiches on those butter fattening layers of deliciousness.</li> <li>I made a hashbrown casserole – for breakfast.  Lola loves it and it is super easy.</li> <li>I also cooked (don’t laugh) 20 pieces of patty sausage – that way in the morning I can just nuke them while I am frying eggs.  It takes 15ish minutes to cook that stuff in the morning.  I do use the precooked stuff if desperate – and it’s fine – but this way is much more cost effective.  </li> </ul> <p>For my MOM friends trying to plan things out – hope this helps!!!  </p> Mom Can now I am really struggling with what I am going to do about this blog site.  I’ve watched some of my favorites do the same thing.  ‘</p> <p>It’s a time commitment.</p> <p>I started out with the idea it was a great way to stay in touch with folks.</p> <p>Then it turned into the Talk about Bubba site.  Bubba’s fine…not that we don’t still have our list for him, but he’s fine.  The big kids are fine…Hubby’s fine.  I’m fine…We’re fine.</p> <p>I’m struggling with the whole “Mom Can I?” thing.  I’ve been that for soo long…and it’s changing.  I have THREE teenagers now.  It’s not the same.</p> <p>I’m working more…for the two best people ever and with the best co workers ever.  (Two part time jobs, two different bosses) so that takes time..</p> <p>I don’t know….I have some ideas…might start An <a href="http://dictionary.reference.com/browse/online+dictionary">online dictionary</a> resource, such as <a href="http://dictionary.reference.com/">Dictionary.com,</a> can give users direct, immediate access to the <a href="http://dictionary.reference.com/browse/definitions">definitions</a> of a term, allowing them to compare definitions from various dictionaries and stay up to date with an ever-expanding <a href="http://dictionary.reference.com/browse/vocabulary">vocabulary</a>. </p> <p>3.  the condition of being <a href="http://dictionary.reference.com/browse/definite">definite</a>, distinct, or clearly outlined: His biceps have great muscle definition.</p> <p>4.  Optics. sharpness of the <a href="http://dictionary.reference.com/browse/image">image</a> formed by an optical system.</p> <p>5.  Radio and Television. the accuracy of <a href="http://dictionary.reference.com/browse/sound">sound</a> or picture reproduction.</p> <p>I had a very interesting conversation with my friend yesterday.  Interesting but very sad.  </p> <p>We were talking about her daughter who is now 15.  She is a beautiful girl.  I’ve known her since she was a baby.  Forever, this sweet, beautiful young girl has been a fabulous athlete.  She has defined herself as a TOP ATHLETE.</p> <p>Now at 15, she doesn’t feel (whether true or not) that she is still at the TOP.  She said she doesn’t know who she is if she’s not the “top”athlete.  It broke my heart.  </p> <p>When Crash’s middle school soccer season came to end back in the spring, he was so sad.  Only word for it.  SAD.  They won their conference, but he was sad.    It took me a couple days to figure out where the funk was coming from….but I finally figured it out.  It was over.  He was no longer the looked at soccer guy.  Soccer was over.  He was no longer a captain.  There was nothing left to “be”.  They won.  Season over.  </p> <p>He SAID it to me – which made it even more real.  </p> <p>The look in his eyes made me want to cry for him.</p> <p>Sunday morning, I saw the same sadness in his eyes.  His first year of High School Soccer just came to end this past Saturday night when the Varsity team lost in the 4th round of state playoffs.  He was sad it was over.  It has been a part of who he was since summer started.  He went to EVERY 8:00 am training session – all summer.  He went to every practice all season.  He became “brother’s” with these boys, some of whom he would not have been friends with were it not for soccer.  (Let’s be honest, the upperclass men….9th grader..you get it.)</p> <p> And now it’s over.  His sadness extends to the seniors on the team…their sadness at the END of what was an amazing season (they went undefeated until Saturday night).  Crash said, “Mom, for a couple of these guys, it might have been the last time they play a competitive game.”</p> <p>I get it kid. </p> <p>It’s part of you – June thru November you were a PHS Soccer Player.  </p> <p>So now that is over (even temporarily)  …..you keep asking yourself </p> <p>WHAT are you?  WHO are you? We have had him evaluated – many times- and he passes all benchmarks as far as fine motor skills go.  It’s his gross motor skills that we KNOW are lagging.”  Thank you for repeating yourself…..several times.  Even after I said “no thank you, he’s fine”.  Thank you for then saying “but they would come here, to school, do it”.  Again, I said “no, he’s fine”.  You forced me to pull out the big guns.  “HE HAS BEEN EVALUATED.  HE HAS A NEUROLOGIST and and ORTHOPEDIST that say his fine motor skills are just fine.”  I am more aware than most parents what his skills are……</p> <p>I am sorry that when you sat him down to watch him, to evaluate him, that he didn’t want to do it. You wanted him to cut that paper.  Guess what – he isn’t the most compliant kid in those situations.  Maybe because HE HAS DONE THIS PLENTY OF TIMES…..he has been asked more times than the rest of the kids in the class combined to stand up, sit down, hop, touch his toes, make a circle, draw a line, cut paper, bounce a ball and catch a ball….he knows the routine.  And guess what HE DOES NOT LIKE IT!</p> <p>But since I know he can use a pair of scissors, and does so quite nicely- let it go.  He colors and draws when he wants to.  He has NO interest in learning to write letters – NONE.  Let it go.  He will – whether it’s this week, this month or next year. He will.  Just as every child does – in their own time…and guess what…. Crazy, I know.  But I made LASAGNA and it’s always better when it’s cooked and settled then reheated.  Not sure why that is true…but it is.</li> <li>The rest of the week Ill be flexible with the order of the other meals depending on the leftover situation</li> <ul> <ul> <ul> <ul> <ul> <ul> <li>Ham (purchased a nice size spiral sliced one from Aldi – my family LOVES a “real” ham.  I’ll do a real mashed potatoes and green beans PLUS another favorite, Crockpot Apples.</li> <li>Pot Roast with carrots, celery, potatoes and onions. I’ve got some Trader Joe Pumpkin Bread mix – which is AWESOME so that is a possibility</li> <li>White Bean Soup – since I’ve made the Ham – I’ll have a ham bone – and you MUST have a HAM bone to make this soup.  It is a family favorite!!!  Even if I make it and freeze it for later.  It goes great with cornbread – and I have a boxed Jiffy mix on hand.  This is a DFINITE make meal for the week – but might be frozen for later – again – depending on the leftover situation</li> <li>Friday night FOR SURE is Providence High School Homecoming BBQ night.  It is so good – we ordered several pounds this year – because it also freezes beautifully.  :0)   I’ll pick up some fresh buns, cole slaw and whip up some baked beans and walla – dinner.</li> </ul> </ul> </ul> </ul> </ul> </ul> </ul> <p>Also on for this coming week…Pootie takes the SAT’s for the first time this coming Saturday.  Very cool.  My baby is growing up.  </p> <p>Crash has two high school soccer games – one against one of his best buddies tomorrow night.   They have not been on opposing teams for a long time – they will be so cute.  </p> <p>Sassy Lola girl has started drama production tryout stuff at the middle school.  That is going to add a whole new dynamic to my evening….but so excited for her.  Thank goodness my mom has retired so hopefully she can be my back  up if needed!  </p> <p>THE BABY- (yes, he is still called the BABY.)  He is LOVING preschool and so far – has not been kicked out!  He is going three days a week and it is so exciting for me to see him so happy.  Even after getting sick the first week….</p> that used to be called <a href="http://www.food.com/">RECIPEZAAR</a>.  (It is now called <a href="http://www.food.com/">FOOD.com</a>)  and it has long been one of my favorites.</p> <p>I can sort by what I’m looking for…I HIGHLY recommend it.  </p> <ul> <li>You can look without creating an account.  I opted long ago to create an account.  It saves things to “my cookbook”…so I can quickly go back to recipes.</li> <li>You can filter by ANYTHING – beef, chicken, veggie, sides, casseroles, crock pots, nut free, weight watchers – you name- you can find list after list of recipes!</li> <li>AND they have very cool tools to help you plan a menu – for whatever length of time you want – AND it can help you make the grocery list.</li> </ul> <p>I use part of this method and then I also have a spiral notebook that I keep my “lists” in.  So here are my other random TIPS (as they come to me so if it sounds scattered – sue me!)</p> <ul> <li>Keep something, whether online or tried and true pen and paper, to write down your plan and your shopping list.</li> <li> Ask you family WHAT they want to eat.  Ask them what you cook that they like and would want again.  Ask them what they don’t like…Crash beef stroganoff…</li> <li>Start small – don’t try to plan a whole month at a time…..start with 5 days or a full week.</li> <li>Don’t forget you need to have breakfast and lunch stuff -  </li> <li>Decide WHY you want to do this – is the grocery bill out of control?  Do you want them to stop eating cereal for dinner (although ya know, Suzy said it a long time ago, that stuff is fortified with vitamins and minerals... hahaha)</li> <li>If you are trying to stop the ridiculous spending that occurs when you “just run into the store” – then think about where you shop.  Think about what’s on sale – consider planning a morning looking at different stores.  I LOVE Aldi for pantry items – and what I can’t get there – I go to BiLo or Walmart – the HT prices are ridiculous and KILL a budget….but they have great sales.</li> <li>Give yourself one easy night and then try something higher up on the richter scale for difficulty.</li> <li>Make sure you also think about what you have going on that day for that particular meal.  If I know I’m out at the office – I go to casseroles or crock pot….If I’m at home all day “with nothing to do” (which NEVER happens)  I go for the Chicken Parm or something that requires more prep time.  (They are picky picky picky – they want THIN pounded out Chicken…..)</li> <li>POST the menu – I have a dry erase board on the fridge and put the week’s dinner plans up there.  Stops everyone from asking me what the heck is for dinner </li> <li>If you have something come up – that’s fine –feed them a quick sandwich and move things forward a night.  Or the heck did this happen?<p>I usually save stuff like this for birthdays or special occasions.    I am not one to typically be sappy….unless it is over a picture…and a song.  The two together can be a HUGE punch in the gut.</p> <p>We (I) throw pictures up on the door from our mud room to the garage..it’s a perfect door.  Well one fell off the other day and it caught my eye.</p> <p>It was me and my
