The 80’s at ATE

As I update you on this weeks menu, I’ve got my “radio” on my favorite channel….the 80’s at 8.  Really  gets me going in the morning!

This week was a bit different because Hubby and I were out of town so my normal planning that I do on Sunday had to be a quick grocery run on Monday.  Not as much prep work was done….

So this week on the menu

Monday

I used one of the packages of stewed “mexican” chicken that I froze last week and served it over top of tostadas.  (A new family favorite)  I made some refried beans (Bubba likes refried beans) AND a small pot of black beans, corn and diced tomatoes with green chiles.  Topping included cheese, avocado, lettuce, tomatoes and onions. 

Tuesday

I”m going to make a pan of lasagna as soon as I get home from taking Bubba to school and running a few quick errands.  I have a loaf of

Wednesday

The boys have a an away game, and I have to work SO, I need something that can go into the crock pot and be ready when we all get home.  A simple delicious feel good meal for them TURKEY and GRAVY.  Turkey breast goes into the crock pot (after being rinsed and patted dry and give it some salt and pepper love) and cooks until it falls apart then I add canned/jarred Turkey Gravy – SO SIMPLE and they love it.  Depending on my day – I might make them some mashed taters – otherwise I’ll serve rice and a green veggie.  (probably green beans)

Thursday

Chicken Picatta from my favorite skinnytaste.com website  I’ll serve this angle hair pasta and broccoli.  FYI – on dishes like this – I always make sure there is PLENTY of sauce for Hubby and the kids to spoon overtop of the chicken and pasta.

Menu Late-ness

I completely forgot to post my menu for this week…but since I am late – I now get to add the yummy score to each dinner.

Couple of notes about this week:

  • I cooked two packages of chicken in mexican spices on Sunday in the crock pot, shredded and separated into two bags and then threw into freezer. I’ll use them in the upcoming weeks for tacos, tostadas, enchiladas, or whatever. 
  • I KNEW that on Wednesday we would have PIZZA HUT pizza – it was my anniversary, plus we had an away game, and I was DAMN sure not cookin’

Monday

I tried another new recipe that I found on SKINNYTASTE.COM (http://www.skinnytaste.com/2009/03/chicken-cordon-bleu.html)  IT WAS DELICIOUS!!! I really doubled it and we are having the leftovers tonight (Thursday).  To add a bit of kick to it – I mixed up some hollandaise for those not concerned about what they eat to spoon over the TOP.  It was a HUGE hit and I will DEFINITELY move this into my monthly menu planning.

THIS one is. :-)  I promise you it was SUPER EASY and soooo good!!!  (oh and I served it with Brown Rice and Peas- hubby’s favorite……NOT)

 

Tuesday

I marinated two pork tenderloins in some bottled Lawry’s deal.  Served with macaroni and cheese and french sliced green beans.  Another hit – PLUS the leftovers were great for Bubba’s lunch box

Wednesday

Pizza Hut for anniversary dinner after PHS beat South Meck in soccer.  It was wonderful.  Everything that this momma wanted.

Thursday

Leftovers!  The chicken is in the over warming up now.  I’ve got another sauce pan of hollandaise ready to spoon over :-)  oh and for anyone that wants – there is leftover pizza.

 

Couple other tidbits

LONG story that took up most of the spring for my mom and I, but…my uncle is very happy.  He has gained weight….and considering what he has been thru…he’s doing GREAT!!!!

AND – let me go ahead and say.. I KNOW that August 2015 is going to be tough for this family.  ALL of the kids don’t blink an eye at coming in, flopping on our big ol bed, and watching TV with us.  I LOVE THAT.  So this was Monday night – watching the season premier of THE VOICE (dear lord I really didn’t think that Adam could get better looking, but he did.)  FOUR of us – lined up like dang sardines…watching THE VOICE.  AWESOME! (Crash and Lola were still doing homework…otherwise I am convinced they’d have wedged themselves in there too!)

Menu Madness-less-ness

I’ve gotten back into the groove of school. I’ve been slow to add the blog aspect back- but it has been crazy.  LOTS have happened.

But first….and most important…what’s for dinner in the Dub household this week.

 

Sunday night-  Hubby had to ref all day and I needed to grocery shop, meal prep and wanted to get the garage cleaned up.  I gave myself an easy night…

Mexican-  I made roasted chili peppers, stuffed with chorizo and cheese for an appetizer, with build your own tostada or burrito stuff on hand.  The tostada’s were a HIT!

Monday dinner. I opted for a Chicken and Mushroom in White Wine sauce with garlic sautéed green beans and rice for dinner.  Everything is prepped and ready to go!  Lola helped me prep all the chicken for the week.  It SOOO makes things easier.  I found the recipe on www.skinnytaste.com  and it is a SUPER easy – GOOD recipe!!!!  The green beans par cooked with sautéed onions and garlic and they’ll get a quick toss in a pan before serving.  Delicious and still crispy.

Tuesday is an easy night because I am going out to dinner with some of “the guys”.  So, I’ve got Roast Beef Sammies and good bakery bread for the family…along with a RIDICULOUS amount of ice cream for them to choose from.

Wednesday night – we have a high school soccer game.  I’ll make a big pan of Chicken Parmesan, served with a side of pasta and broccoli.  Again – Lola has already pounded out the chicken for me – so all I have to do is sauté and then bake…this is a great meal to carb the boys up – they also have a game on Thursday night..

Thursday night – we’re going with a lighter fare – Cilantro Lime Shrimp with brown rice and fresh pineapple.  The cilantro did double duty from Sunday nights dinner.  Just love the aroma in the kitchen from fresh cilantro!!!

Other things being prepared for the week…Monday morning some French Toast – lots of deli sliced turkey sandwiches on a variety of bakery breads, tons of fresh oranges, apples and bananas…and of course –  I made sure there were leftovers for in between meal snacking!
